Avocado Strawberry Spinach Salad - Poppy seed dressing

SALAD INGREDIENTS

6 cups fresh baby spinach

1 avocado, diced
4 ounces crumbled gorgonzola or blue cheese

1/4 cup sliced almonds, toasted

1 pint strawberries, hulled and sliced

Small red onion, thinly sliced

POPPYSEED DRESSING INGREDIENTS:

1/2 cup avocado oil (or any oil, such as olive oil)

3 Tablespoons apple cider vinegar

2 Tbsp. honey

1 Tbsp. poppy seeds

pinch of ground dry mustard (optional)

salt and pepper

Procedure

Ingredients

1 carrot

1 celery stalk

1 apple

1 cup bean sprouts

3⁄4 cup sprouts

1⁄2 cup sunflower kernels

For Dressing

1 tablespoon lime juice

1⁄2 teaspoon reduced-salt soy sauce

1 teaspoon grated fresh ginger

1 tablespoon finely chopped coriander

2 tablespoons sunflower oil

1⁄2 teaspoon sesame oil

Pepper to taste

Preparation

Make sure that you slice all the vegetables into thin pieces, then mix the carrot, celery, apple, bean sprouts, sprouts and sunflower kernels in a mixing bowl. 1/2 cup chopped red bell pepper

Procedure for preparation
